Our Gusto line of organic salame is made exclusively for Whole Foods Market. Good salame is directly affected by the quality of the raw materials you start with. The first step is sourcing the best organic meat that we can find. In our case, all of our Gusto meat comes from Becker Lane Organic Farm. On his farm in Iowa, Jude Becker, a 6th generation farmer, raises a cross between two heritage breeds, Berkshire and Chester White. Animal husbandry is of the utmost importance on Jude’s farm. In fact, he is not just USDA certified organic, but also part of the Global Animal Partnership and Step 3 rated.
Once we have sourced a raw material that adheres to our standards, we apply our traditional methods for making salame. We start by formulating our spice mixtures in a way that is not overpowering and lets the flavor of the meat come through. We also use low temperature fermentation with no heat treatment. We inoculate the outside of our salame with beneficial white mold as this helps in the drying process. Another important step that makes us stand out is the respect we allow for the proper aging time. We don’t rush our salame and this helps us achieve the deep flavor we are going for. Last but not least is our packaging that insures you get the salame we meant for you to have, by stabilizing the product just long enough for you to enjoy.
