Oliviero Colmignoli is the 4th generation of his family to make dry cured meats. His family began making cured meats in Norcia, Italy over 100 years ago. He came to the United States in 2004 to carry on his family’s deeply rooted culture of salumi. Seeing the need for high quality artisanal salumi, he founded Olli Salumeria in 2010. Since then, we have been sourcing the best raw materials, and applying the traditional methods Oliviero learned in Norcia, to produce our traditional salame.
Our Gusto line is made exclusively for Whole Foods Market. Good salame is directly affected by the quality of the raw materials you start with. Once we have sourced a raw material that adheres to our standards, we apply our traditional methods for making salame. We start by formulating our spice mixtures in a way that is not overpowering and lets the flavor of the meat come through. We also use low temperature fermentation with no heat treatment. We inoculate the outside of our salame with beneficial white mold as this helps in the drying process. Another important step that makes us stand out is the respect we allow for the proper aging time. We don’t rush our salame and this helps us achieve the deep flavor we are going for. Last but not least is our packaging that insures you get the salame we meant for you to have, by stabilizing the product just long enough for you to enjoy.
The Gusto Line
Our Gusto line of organic salame is made exclusively for Whole Foods Market. Good salame is directly affected by the quality of the raw materials you start with. We source the best organic meat that we can find. All of our Gusto meat comes from Becker Lane Organic Farm in Iowa. Jude Becker, a 6th generation farmer, raises a cross between Berkshire and Cheshire White pigs, two heritage breeds. Animal husbandry and welfare is of the utmost importance on Jude’s farm. He is USDA certified organic, part of the Global Animal Partnership, and Step 3 rated for the care of his pigs.
Genoa is a mild salame, simply seasoned with salt and white pepper.

Piccante is flavored with spicy paprika and chili pepper for that extra kick.

Sopressata is a robust salame flavored with whole black peppercorns, white pepper, sea salt, and garlic.

We are excited to announce our newest addition to Gusto, our all-natural line - only available at Whole Foods Market. The pork we select for our all-natural line comes from pigs raised on 100% vegetarian diet. No antibiotics or growth hormones have ever been used.
We call this salame “Toscano” because Florence fennel (”finocchio” in Italian) grows wild in the Tuscan hills and is closely associated with the regional cuisine. Fennel pollen conveys a slightly licorice-like aromatic intensity that has made it the pork enhancer of choice for generations.

The spicy Calabrese gets its kick from cayenne pepper & paprika.

Napoli Salame is smoked over applewood giving it a complex, hearty flavor traditional to the smoked salame from Naples.

We are extremely sensitive to our customer’s needs and the integrity of our product. We follow strict internal rules in our production facility and we don’t allow any allergen to even enter the production area in order to avoid the possibility of cross contamination. All of the Gusto line is Gluten Free. Our salame is free of milk products (which are sometimes used as fillers by other salame companies). Even our starter culture, which is called a lactic acid starter, is not grown from milk. We do not add any chemical nitrates, instead we use a natural substitute. We strive to provide a sincere salame made with highest quality meat and a clean ingredient statement that can be enjoyed by all.
